This is a recipe I adapted from Jessica Seinfeld’s book, Deceptively Delicious. My original intent was to make these for the kids adding a healthy twist to the normal chocolate chip cookie. Adding the chickpeas is great way to add protein and fiber. Plus I added the flax seed meal and wheat germ for a little extra health kick! They turned out so delicious that now my kids are lucky to even get one before I eat them all up!
Ingredients:
1 cup brown sugar
3/4 cup butter
2 egg whites
2 teaspoons vanilla extract
1 15 ounce can chickpeas (garbanzo beans), drained and rinsed
2 cups dark chocolate chips
1 cup white flour
1/2 cup whole wheat flour
1/4 cup wheat germ
1/4 cup flax seed meal
1/2 cup old fashioned oats
1 teaspoon baking soda
1/4 teaspoon sea salt
Instructions:
Preheat oven to 350 degrees. Coat a cookie sheet with parchment paper.
Beat sugar and butter (let soften) until smooth.
Beat in egg whites and vanilla, then add chickpeas and dark chocolate chips. Add flour, wheat germ, flax seed meal, oats, baking soda and salt.
Drop by tablespoonful onto baking sheet and press down on each cookie with a fork
Bake 11 to 13 min, until golden brown.
